As a child growing up , Somehow Sundays happened to be my favourite days of the week. And if you are Mzansified enough , you wont event ask me why as we all knew that mama would be killing it in the kitchen. The only obstacle was just to get over church in the morning and the rewards would be a table filled with all that soulful , comfort food we call 7 Colours.
7 Colours , is a traditional South African meal that would include Rice in most cases , Chicken or beef for the meat and a whole lot of sides such pumpkin , sweet potatoes , beetroot , cabbage , beans salad , potato salad , coleslaw etc. And if you were lucky enough to have more food , this would be your Monday Lunch box at school . Here is my favourite 7 colours Recipe.
Lets start with the Hero of the Day – The RICE.
Ingredients .
- 250 ml (1 cup ) Tastic Rice – Long Grain Parboiled Rice
- Fresh Parsley (optional)
- 1 tbs (5ml) Salt
- 1.5 ml (6 cups )Water
Preparations
- Place Tastic Rice , Water and Salt into pot.
- Bring to boil , uncovered
- Boil on the Stove for 20 – 25 minutes (Keep checking , so that you dont over cook)
- Remove from the heat , Drain of excess water.
- Add some fresh parsley on the rice and serve.
The Meat dish would either be a Hearty Beef stew or Grilled chicken , so i found a simple , quick and easy Recipe.
Lets start with the Chicken.
Ingredients
- 1 Full chicken cut into 8 pieces
- 1 Knorr – Spicy Roast chicken – cook in a bag
- 1 Robertson Cajun creole Rub (2 1/2 Tbs)
Directions.
- Place chicken into bag
- Season with Knorr Dry sauce
- Add the robertson Cajun creole rub
- Close the Bag
- Massage the mixture into the chicken
- Bake in the oven at 180 degrees for about 50 minutes at the lowest shelf.
- Ensure Grill is off all the time
- Keep enough space for the bag to expand
When ready , place on a dish with rice and serve with your favourite sides of cold salads and hot veggies.
The other option is the Beef
Ingredients
- 1 kg of Beef Stew
- 1 Onion
- 1 red pepper
- 1 Tbs of Crushed Garlic
- 1 bag of poitjie mix
- 2 Tbs of cooking oil
- 1 Tbs of Rajah Mild and Spicy Curry powder
- 1/2 cube of Knorrox beef curry flavour
- 2 Tbs of Robertson steak and chops spice
- 1 Knorr Hearty Beef stew – Dry cook in Sauce.
- 400 ml of water
Preparations
- Heat pot with Cooking oil.
- Add meat with Salt and brown for 5 minutes
- Add Onion, red pepper and crushed garlic
- add the curry and steak and chops spice and Mix together
- Mix beef stock in a cup of hot water , pour into the pot and mix together – Let it boil for 10 – 15 minutes.
- Lower the heat from 6 to 4 , add the Knorr dry cook in sauce with water.
- add the poitjie mix
- and cook for about 30 – 40 minutes on low heat
- and serve
When ready , place on a dish with rice and serve with your favourite sides of cold salads and hot veggies.
